Testing Lab

Run real experiments on your recipes: change one thing, taste blind, keep the evidence.

Start a test session

From any recipe, press New trial, or open Testing Lab and press + New session. A session pits two versions against each other, a baseline and a challenger, and you give it a hypothesis (“higher hydration = a more open crumb”) plus the variables you are changing.

Shikomi reads what changed between the two versions and warns you when more than one thing did. One variable per session gives the cleanest answer.

Blind scoring

When it is time to taste, turn on Blind tasting. Shikomi hides which sample is which (they become 🅐 and 🅑 in random order) and asks you to score each one from 1 to 10 on texture, flavor, appearance, and aroma. Labels reveal only after every score is in, so your palate decides, not your expectations.

You can add or drop scoring dimensions per session, and switch any of them between a 1–10 scale and a photo-plus-note.

Photo timeline

Log photos at any point during a session: dough at mix, after proof, out of the oven. They line up on the session’s photo timeline, so “what did the v6 crumb actually look like?” finally has an answer.

Comparing results

A session lays its two samples side by side, with scores, variables, and photos together, so the winner is clear. Record it with a verdict: ● Keeper, ○ Marginal, or ✕ Went back. If a session’s variables nearly match one you have already run, Shikomi flags the duplicate before you fire up the oven.

GOOD TO KNOW

Mark the session ● Keeper and the winning sample’s version is crowned ● keeper in the recipe’s history; mark it ✕ Went back and the challenger version is stamped ✕ went back. The session stays linked either way.
